Ingredients

  • 1 pound ground beef
  • 2 medium zucchinis, sliced into half-moons
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil
  • Grated Parmesan cheese (optional, for serving)
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Heat the Oil: In a large skillet, heat the olive oil over medium heat.
  2. Cook the Beef: Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s browned and cooked through (about 5-7 minutes). Drain excess fat if necessary.
