Instructions:
- Prepare the Ingredients: Season the chicken pieces with salt, pepper, and a bit of Cajun seasoning. Slice the Andouille sausage, dice the onion, bell pepper, and celery, and mince the garlic. Keep these ingredients handy.
- Sear the Meats: Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken pieces and Andouille sausage slices. Sear them until they get a nice brown color on all sides. Once done, remove them from the skillet and set them aside.
- Sauté the Aromatics: In the same skillet, add the diced onion, bell pepper, celery, and minced garlic. Sauté them until they soften and become fragrant, usually for about 5-7 minutes.
- Add the Tomatoes and Spices: Pour in the diced tomatoes (with their juices) and stir well to combine with the sautéed vegetables. Add the Cajun seasoning, paprika, dried thyme, Worcestershire sauce, hot sauce, and season with salt and pepper. Stir everything together and let it cook for a couple of minutes.
- Incorporate the Rice: Add the rice to the skillet, stirring it into the mixture to coat it evenly with the flavors.
- Cook with Broth: Pour in the chicken broth, ensuring it covers the rice and ingredients. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet or pot and let it simmer for about 20-25 minutes, or until the rice is cooked through and has absorbed the liquid.
- Combine the Meats: Once the rice is cooked, return the seared chicken and Andouille sausage to the skillet. Stir everything together gently. Let it simmer for an additional 5-10 minutes to allow the flavors to meld together.
- Garnish and Serve: Once everything is cooked and the flavors have melded, garnish the jambalaya with chopped fresh parsley for a pop of color and freshness. Serve hot and enjoy!
Jambalaya is a wonderful dish that’s versatile and open to interpretation. Feel free to add shrimp, crab, or any other protein you like. And adjust the spice levels to suit your preference. It’s a perfect meal for gatherings or a flavorful weeknight dinner!
