TEX-MEX MEATLOAF

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C).
  2. Prepare the meat mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, diced red bell pepper, minced jalapeño, diced green chilies, corn kernels, shredded cheese, eggs, chopped cilantro, chili powder, cumin, smoked paprika, salt, and pepper. Mix everything together until well combined. It’s best to use your hands for this to ensure even distribution of ingredients.
  3. Shape the meatloaf: Transfer the meat mixture onto a baking sheet lined with parchment paper. Form the mixture into a loaf shape, making sure it’s evenly shaped and compacted.
  4. Make the glaze: In a small bowl, mix together the ketchup, brown sugar, Worcestershire sauce, and hot sauce (if using). Set aside.
  5. Glaze and bake: Brush the prepared glaze over the top of the meatloaf, covering it completely. Place the meatloaf in the preheated oven and bake for about 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 160°F (71°C). If the top of the meatloaf begins to brown too much before it’s fully cooked, tent it with aluminum foil.
  6. Rest and serve: Once cooked through, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute, making it easier to slice without falling apart. Garnish with additional fresh cilantro if desired.
  7. Serve and enjoy: Slice the meatloaf and serve it with your favorite Tex-Mex sides such as Mexican rice, roasted vegetables, or a side salad. Leftovers (if any!) can be stored in the refrigerator for a few days.

This Tex-Mex twist on meatloaf is packed with flavor and makes for a satisfying meal that’s perfect for any occasion. Feel free to adjust the spice levels by adding more or less jalapeño or hot sauce to suit your taste preferences.
