For the Pistachio Glaze:
- 1/2 cup shelled pistachios, finely chopped
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon almond extract (optional)

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
Step 2: Prepare the Pistachios
Place the shelled pistachios in a food processor and pulse until finely ground. Set aside 1 cup for the bread and 1/2 cup for the glaze.
Step 3: Mix Dry Ingredients
In a medium bowl, whisk together the all-purpose flour, ground pistachios, baking powder, baking soda, and salt. Set aside.
Step 4: Cream the Butter and Sugar
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This can be done with a hand mixer or a stand mixer.
Step 5: Add Eggs and Vanilla
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 6: Incorporate Dry Ingredients
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Step 7: Add Greek Yogurt
Fold in the Greek yogurt until the batter is smooth and well combined.
Step 8: Transfer to Loaf Pan
Pour the batter into the prepared loaf pan and spread it evenly.
