Directions:
In a saucepan, combine chopped apples, sugar, cinnamon, and butter. Cook over medium heat for 5-6 minutes until apples are soft.
Dissolve cornstarch in apple cider and add to the apple mixture. Stir and cook for an additional 2 minutes until thickened.
Lay out the flour tortillas and divide the apple filling evenly among them, placing the filling in a line down the center of each tortilla.
Roll up the tortillas tightly to form taquitos.
Preheat the air fryer to 380°F (190°C).
Spray the taquitos with cooking spray and place them in the air fryer basket. Cook for 8-10 minutes until they are golden brown and crispy.
Serve warm with a dusting of powdered sugar or a dollop of whipped cream if desired.
