Instructions:

Prepare the Ingredients:

  1. Preheat the oven to 400°F (200°C) for the potatoes.
  2. Clean and cut the red skin potatoes into quarters. Toss them with 1 tablespoon olive oil, salt, pepper, and Italian seasoning. Spread them on a baking sheet and bake for about 25-30 minutes, or until golden and tender.
  3. Season the chicken breasts with salt, pepper, and paprika. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and keep warm.
  4. In the same skillet, add the shrimp, season with salt and pepper, and cook for 1-2 minutes on each side, or until they turn pink and opaque. Remove from the skillet and set aside.
  5. Steam the broccoli florets until tender, about 3-4 minutes in the microwave or 5-7 minutes in a steamer.

Assemble the Dish:

  1. Slice the cooked chicken breast into strips or bite-sized pieces.
  2. In a large mixing bowl, combine the roasted red skin potatoes, steamed broccoli, sautéed shrimp, and sliced chicken. Gently toss to mix.
  3. Add the three-cheese blend to the hot mixture. The residual heat will help melt the cheese. If needed, you can microwave the mixture for 30-60 seconds to ensure the cheese is perfectly melted.
  4. Finish with a dollop of butter for extra richness and season with additional salt and pepper if needed.
