Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Place them in the bottom of the crockpot.
  2. Make the Gravy Mixture:
    • In a medium bowl, whisk together the cream of chicken soup, dry chicken gravy mix, chicken broth, paprika, and dried thyme or rosemary until well combined. If you prefer a thicker gravy, you can later thicken it with a flour mixture (explained in step 5).
  3. Combine:
    • Pour the gravy mixture over the chicken in the crockpot, ensuring the chicken is well coated.
  4. Cook:
    • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Thicken the Gravy (Optional):
    • About 30 minutes before serving, if you find the gravy too thin and prefer it thicker, mix 2 tablespoons of flour with 2 tablespoons of water in a small bowl until smooth. Stir this mixture into the crockpot, mixing well. Cover and continue cooking for another 30 minutes, or until the gravy has thickened to your liking.
  6. Serving:
    • Carefully remove the chicken from the crockpot and place it on a serving plate. Stir the gravy well and taste for seasoning, adjusting with more salt and pepper if needed. Pour the gravy over the chicken or serve it on the side.
  7. Serve with:
    • This dish goes wonderfully with mashed potatoes, rice, or your favorite steamed vegetables.

Tips:

  • Chicken Size: If your chicken breasts are particularly large, you might want to cut them in half horizontally to ensure they cook evenly and absorb more gravy flavor.
  • Low and Slow: Cooking on low heat is recommended for the most tender results, but if you’re short on time, the high setting can be used as indicated.
  • Herbs: Feel free to experiment with different herbs to match your taste preferences or to complement other dishes you’re serving.
