1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
2. Prepare the Potatoes
In a large bowl, combine the halved potatoes and chopped bacon. Drizzle with olive oil and honey, then sprinkle with garlic powder, onion powder, salt, and pepper. Toss everything together until the potatoes are well coated.
3. Arrange on Baking Sheet
Spread the potato and bacon mixture in a single layer on the prepared baking sheet, ensuring the potatoes cut-side down for maximum crispiness.
4. Roast in the Oven
Roast the potatoes in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and tender. For extra crispiness, you can flip the potatoes halfway through cooking.
5. Serve
Once done, remove the potatoes from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving.
