Ingredients for Parmesan Garlic Roasted Potatoes
- 2 lbs baby potatoes (or Yukon Gold, chopped into bite-sized pieces)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried rosemary (optional)
- 1 teaspoon dried thyme (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
How to Make Parmesan Garlic Roasted Potatoes
Step 1: Prep the Potatoes
- Preheat your oven to 400°F (200°C).
- Wash and dry the baby potatoes (or Yukon Gold potatoes if using), then cut them into bite-sized pieces if they’re larger.
Step 2: Season the Potatoes
- In a large mixing bowl, toss the potatoes with the olive oil, minced garlic, salt, pepper, and dried herbs (if using). Make sure each piece is well-coated with the oil and seasonings.
Step 3: Add Parmesan Cheese
- Add the grated Parmesan cheese to the potatoes and toss again until evenly distributed. The Parmesan will create a delicious, crispy crust as it bakes.
Step 4: Roast the Potatoes
- Spread the potatoes in an even layer on a large baking sheet lined with parchment paper or foil. Be sure to leave space between the potatoes to ensure even roasting.
- Roast the potatoes in the preheated oven for 25-30 minutes, tossing halfway through, until they are golden brown and crispy on the edges.
Step 5: Garnish and Serve
- Remove the roasted potatoes from the oven and sprinkle with fresh parsley. Serve hot alongside your favorite main dish.
