Preparing the Ingredients:

  1. Grate the Carrots: Peel and grate the carrot using a fine grater. Measure out 1/2 cup and set aside.
  2. Process the Dates: In a food processor, pulse the pitted dates until they form a sticky paste. If your dates are dry, soak them in warm water for 10 minutes beforehand and drain well.

Making the Energy Bites:

  1. Combine Ingredients: In a mixing bowl, combine the rolled oats, grated carrots, date paste, almond butter, shredded coconut, chopped walnuts or pecans, raisins, chia seeds (if using), ground cinnamon, ground nutmeg, ground ginger, vanilla extract, and a pinch of salt. Add maple syrup or honey if you prefer sweeter bites.
  2. Mix Well: Stir everything together until well combined. The mixture should be sticky and hold together when pressed.
  3. Form the Bites: Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

Setting the Bites:

  1. Chill: Refrigerate the energy bites for at least 30 minutes to firm up. Once set, transfer them to an airtight container for storage.

Storing Leftovers

Store the Carrot Cake Energy Bites in an airtight container in the refrigerator for up to 1 week. For longer storage, you can freeze them for up to 3 months. Simply thaw in the refrigerator before enjoying.
