Directions

Step 1: Cook the Noodles

  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside, tossing with a little oil to prevent sticking.

Step 2: Brown the Beef

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.

Step 3: Add Aromatics

  1. Push the beef to one side of the skillet and add the minced garlic and ginger to the empty space. Sauté for about 30 seconds until fragrant, being careful not to burn them.

Step 4: Add Vegetables

  1. Add the sliced bell peppers, carrots, and half of the chopped green onions to the skillet. Stir everything together and cook for an additional 3-4 minutes until the vegetables are tender but still crisp.

Step 5: Make the Sauce

  1. In a small bowl, whisk together the soy sauce, oyster sauce (if using), and brown sugar. Pour the sauce over the beef and vegetables, stirring well to combine.

Step 6: Combine Noodles

  1. Add the cooked noodles to the skillet and toss everything together until the noodles are evenly coated in the sauce. If you want a thicker sauce, add the cornstarch mixture and stir until the sauce thickens.

Step 7: Season and Serve

  1. Taste and adjust seasoning with salt and pepper as needed.
  2. Serve hot, garnished with the remaining green onions and sesame seeds if desired.

Tips and Tricks

  • Use Leftovers: This dish is a great way to use leftover cooked noodles or vegetables. Just toss them in and adjust the sauce as needed.
  • Add More Vegetables: Feel free to add more vegetables like broccoli, snap peas, or mushrooms for extra nutrition and color.
  • Make it Spicy: Add red pepper flakes or a drizzle of sriracha to kick up the heat.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or broth to loosen the noodles.
