Easy Zucchini Beef Skillet Recipe
Ingredients
- 1 pound ground beef
- 2 medium zucchinis, sliced into half-moons
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 can (14.5 oz) diced tomatoes (drained)
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 2 tablespoons olive oil
- Grated Parmesan cheese (optional, for serving)
- Fresh basil or parsley (optional, for garnish)
Instructions
- Heat the Oil: In a large skillet, heat the olive oil over medium heat.
- Cook the Beef: Add the ground beef to the skillet. Cook, breaking it apart with a spatula, until it’s browned and cooked through (about 5-7 minutes). Drain excess fat if necessary.
- Add Vegetables: Add the chopped onion, bell pepper, and minced garlic to the skillet. Sauté for about 3-4 minutes, until the vegetables are softened.
- Incorporate Zucchini: Add the sliced zucchini to the skillet, stirring well to combine. Cook for an additional 5 minutes, stirring occasionally.
- Add Tomatoes and Seasoning: Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 3-5 minutes, allowing the flavors to meld and the zucchini to soften.
- Serve: Remove from heat. If desired, sprinkle with grated Parmesan cheese and garnish with fresh herbs before serving.
