Directions
Step 1: Cook the Pasta
- Cook pasta in a large pot of salted boiling water according to package directions until al dente. Drain and set aside.
Step 2: Cook the Bacon
- While the pasta cooks, cook the bacon in a large skillet over medium heat until crispy. Remove and place on a paper towel-lined plate to drain. Once cool, crumble the bacon.
Step 3: Sauté the Ground Beef and Onions
- In the same skillet, remove excess bacon grease, leaving about 1 tablespoon for flavor.
- Add the ground beef to the skillet and cook until browned, breaking it up as it cooks. Add diced onion and garlic, and cook until softened, about 3-4 minutes.
Step 4: Add Seasonings and Liquids
- Stir in the beef broth, milk, cream cheese, ketchup, mustard, and smoked paprika (if using).
- Let the mixture simmer until the cream cheese is fully melted and the sauce begins to thicken.
Step 5: Combine Everything
- Add the cooked pasta to the skillet with the ground beef mixture, stirring well to coat.
- Stir in the shredded cheddar cheese and crumbled bacon, mixing until the cheese melts into the sauce.
Step 6: Serve
- Garnish with extra cheddar cheese, fresh parsley, green onions, and optional chopped pickles for that true cheeseburger taste.
Tips and Tricks
- Adjust the Consistency: If you want a thicker sauce, let it simmer a little longer. For a thinner sauce, add a bit more milk or broth.
- Customize the Toppings: Feel free to add tomatoes, lettuce (just before serving), or a drizzle of extra ketchup and mustard.
- Spice it Up: Add a pinch of red pepper flakes or diced jalapeños for a little heat.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of milk to keep it creamy, and warm on the stovetop or microwave until heated through.
To freeze, let the pasta cool completely, then transfer to a freezer-safe container. Freeze for up to 2 months. Thaw overnight in the fridge before reheating.
