Mini Strawberry Cheesecake Bites

Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons unsalted butter, melted

For the Cheesecake:

  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream

For the Strawberry Topping:

  • 1 cup strawberries, hulled and sliced
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions:

1. Prepare the Crust:

  • Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.
  • In a small bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  • Spoon about a teaspoon of the crust mixture into each mini muffin cup. Press down firmly to form a crust at the bottom. Set aside.
