Ingredients:
For the Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 4 tablespoons unsalted butter, melted
For the Cheesecake:
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
For the Strawberry Topping:
- 1 cup strawberries, hulled and sliced
- 1/4 cup sugar
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions:
1. Prepare the Crust:
- Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.
- In a small bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
- Spoon about a teaspoon of the crust mixture into each mini muffin cup. Press down firmly to form a crust at the bottom. Set aside.
