Directions
Step 1: Mix the Dough
In a large mixing bowl, combine the flour, salt, and yeast. Pour in the warm water and stir until all the ingredients are well-mixed and a shaggy dough forms. The dough will be sticky—that’s okay! Cover the bowl with plastic wrap or a clean towel.
Step 2: Let It Rise
Allow the dough to rise at room temperature for 12-18 hours, ideally overnight. This long fermentation time allows the yeast to work slowly, developing flavor and a light, airy texture.
Step 3: Shape and Rest the Dough
After the first rise, the dough will be very bubbly and sticky. Gently transfer it to a floured surface and shape it into a ball. Avoid over-handling the dough to maintain its light structure. Place the dough on a sheet of parchment paper and cover with a towel to let it rest for another 30 minutes.
Step 4: Preheat the Oven and Dutch Oven
While the dough rests, preheat your oven to 450°F (230°C). Place your Dutch oven (with the lid on) inside the oven to heat for about 30 minutes.
Step 5: Bake the Bread
Carefully remove the hot Dutch oven from the oven. Using the parchment paper, transfer the dough (with the paper) into the pot. Cover with the lid and bake for 30 minutes. Then, remove the lid and bake for an additional 10-15 minutes to achieve a deep golden crust.
Step 6: Cool and Serve
After baking, remove the bread from the pot and allow it to cool on a wire rack for at least 10 minutes before slicing. Enjoy your homemade bread warm with butter or olive oil, or use it for sandwiches!
Tips for Perfect No-Knead Bread
- Choose the Right Flour: All-purpose flour works well, but for a more rustic loaf, try using bread flour.
- Control the Rising Time: A longer rise time develops better flavor. If it’s hot in your kitchen, reduce the time slightly to prevent over-proofing.
- Handle with Care: The dough is delicate after its first rise; avoid over-handling to keep the bread light and airy.
- Get Creative with Add-ins: Try adding herbs, garlic, or cheese for extra flavor.
Storage and Leftovers
To keep your bread fresh, store it in a paper bag or wrapped in a clean kitchen towel at room temperature. It’s best enjoyed within 2-3 days, but you can also freeze it for up to 3 months. Slice the bread before freezing to make it easy to toast straight from the freezer.
Recipe Variations
- Whole Wheat: Substitute 1 cup of all-purpose flour with whole wheat flour for a heartier loaf.
- Add Seeds: Sprinkle in sunflower or pumpkin seeds for added texture and flavor.
- Cheesy Bread: Mix in grated cheese and a pinch of garlic powder for a savory twist.
